The return to tradition and family cooking
The trend towards “homemade” recipes, especially for pastry and jam, remains stable after rising in popularity for five years.
- In 2005, 63% of people interviewed tried out recipes and made pastry at home more than once a month.
- One-third of households made jam for their own use, mainly with crystallised sugar (48% of cases).
The 2005 Sugar Barometer confirms the trends revealed in surveys performed in 2000 and 2002. Sugar remains an essential ingredient in the food consumed by the French, regardless of age or sex. Overall, the respondents had a very positive opinion of sugar, awarding it 7.1 points out of 10.
Sweetened products and products suitable for sweetening are evolving and adapting to suit changing demands. These changes have been prompted by the development of an on-the-go lifestyle and the products developed to cater for it.
What people eat provides us with a snapshot of society’s tastes at any given moment. The return of a certain level of “traditional behaviour” reveals the importance of the enjoyable experience of trying out recipes and eating “homemade” sweetened dishes with family and friends.
