The root of the beet (taproot) contains :
- 75% water
- 25% dry matter.
The dry matter comprises 5% pulp: insoluble in water, pulp is mainly composed of cellulose, hemicellulose, lignin, and pectin used in animal feed.
Sugar represents 75% of the root’s dry matter.
